As soon as the water boils, we throw them into the pan and leave to cook until the potatoes are fully cooked.
In the meantime, set the pan to warm up on the fire, peel the onions and carrots, rinse thoroughly. Onion, lard and sausage cut into strips. By the way, you can use absolutely any sausage, I cooked this dish with its different variations, and sometimes even with sausages, and it always turned out delicious in its own way. Carrots can also be cut into strips, but I didn’t bother much and just rubbed it on a coarse grater.
Put lard and sausage on a hot frying pan, wait a little while the fat melts, and the sausage acquires a beautiful crust, put carrots and onions in the same place. Stirring well for 5 minutes, salt, pepper to taste, you can add a couple of garlic cloves rubbed on a fine grater. Pour all this with the remaining water (half a glass). Simmer until almost all of the water has evaporated. So the vegetables are better saturated with the taste of bacon with sausage and will not be dry, as in normal frying.
